Ingredients for 18 servings

1 stick (1/2 cup) margarine, softened in microwave

1 & 1/4 cups plain unsweetened yogurt

2 tablespoons raw unpasteurized honey (I’m not sure, but this is likely optional)

35 dates, blended in a food chopper until they’re a mixture of pureed & small chunks.

1 egg

1 tablespoon vanilla extract

2 cups wheat bran

1 cup whole wheat flour

1 teaspoon baking soda

2 teaspoons baking powder

1/4 teaspoon salt

1 teaspoon cinnamon (not required)

1 cup blueberries

1/2 cup roasted unsalted pumpkin seeds, plus another 1/2 cup for sprinkling on top.

Preparation

1.

Preheat oven to 350°

2.

Soften margarine in microwave, then add in all wet ingredients (not including blueberries! But including pureed dates) and mix together

3.

Mix together dry ingredients separately

4.

Combine wet and dry in as few stirs as possible

5.

Add in blueberries

6.

Put in muffin tins and sprinkle the tops of each muffin with the extra pumpkin seeds

7.

Bake for 20 minutes
