I just made the filling, with some adaptations: cubed and roasted the butternut squash, chicken thighs in place of breasts. It worked well, though the call for high heat was too much for my skillet - I ended up going up to a little above medium heat whenever the recipe called for high heat and that seemed to work fine for me.

Ingredients for 10 servings

1 medium butternut squash (about a pound)

Goya empanada discos

1/2 x Vidalia onion, chopped

2 x chicken breasts

1/2 cup chicken broth

1 strip bacon

3 tbsp brown sugar, divided

1 tsp chili powder

1/2 tsp cumin

1/4 tsp paprika

1 tbsp olive oil

1 tsp whipped butter (or light butter)

1 tsp honey

1 tsp cider vinegar

1/4 tsp salt

1/4 tsp cayenne

3/4 tsp black pepper, divided

1 x egg

1 tbsp water
