1 pound pork breakfast sausage patties

2 pounds pork shoulder or butt, cut into 1-inch cubes

2 1/2 teaspoons kosher salt

3 tablespoons finely chopped fresh sage leaves

3/4 teaspoon salt

3 tablespoons rendered bacon fat or butter

1 tablespoon onion powder
