2 teaspoons ground turmeric

Two 3-inch cinnamon sticks

2 tablespoons extra virgin olive oil

1/3 cup chopped dried apricots , dates, or raisins

½ head cauliflower , cut into bite-sized chunks

One 1-inch piece ginger , peeled and minced

1½ cups chopped ripe tomato (about 1 pound whole, preferably peeled and seeded, or drained canned)

2 cups vegetable stock

Salt and freshly ground black pepper

1 onion , chopped

2 cloves garlic , minced

1 cup pearl couscous

1 cup cooked or drained canned chickpeas

2 medium carrots , cut into bite-size chunks

2 zucchini , cut into bite-sized chunks

1½ teaspoons ground cumin
