2.5 oz tapioca flour (1 tablespoon shy of 1/3 cup

2.5 oz sweet rice flour (1/3 cup, plus 2 tablespoons)

1 tsp Cinnamon

1 tsp Baking Powder

1/2 tsp Xanthan Gum

1/4 tsp Guar Gum

1/2 tsp Salt

3.5 oz unsalted butter, just out of the refrigerator (7 tablespoons)

3 oz mild-flavored honey (1/4 cup)

6 tbsp cold water

cinnamon sugar (optional)
