1 tbsp. fresh lemon juice

1 tbsp. Sherry Vinegar

1 tsp. Honey

1 tbsp. Soy Sauce

2 tbsp. Olive Oil

1 pinch Freshly ground black pepper

4 small carrots, sliced into thin strips, using a vegetable peeler

1/2 head radicchio, quartered and thinly sliced crosswise
