Ingredients

Meatballs:

1/2 lb. extra lean ground beef

1/2 lb. mild Italian sausage, casing removed

1 egg, beaten

1 cup fresh bread crumbs

1 tbsp. Parmesan cheese, grated

1/4 tsp. garlic powder

1/2 tsp onion powder

1/4 tsp. black pepper

Soup:

1/2 cup carrots, finely diced

1/2 cup celery, finely diced

1 cup onion, finely diced

1 tsp. basil, minced

2 garlic cloves, minced

1/8 tsp. thyme

3 cuos water

5 cups chicken broth

1 cup bowtie pasta

1/2 tsp. Worcestershire sauce

1/2 cup stewed tomatoes, diced

2 tbsps. Parmesan cheese, grated

2 cups spinach, chopped

Preparation

Mix all meatball ingredients together well. Shape into 1/2" size balls. In hot pot brown balls. Remove meatbalsl and fat from pot and let drain in wire sieve. Add onions, carrots, celery, basil, garlic and thyme to pot. Saute just till tender. Add water, broth, Worcestershire and pasta. Let simmer for 15 minutes. Add meatballs and tomatoes. Cover. Let simmer another 15 minutes. Add Parmesan cheese and spinach. Simmer 5 minutes. Serve.
