85.0g Roquefort

1.0 tsp mild olive oil

1.0 tsp walnut oil

2 just-ripe pears , cored, then each cut into 8

slices from sourdough bread loaf, halved and toasted just before serving

2 handfuls baby salad leaves

honey

5.0 tbsp double or whipping cream

FOR THE DRESSING

peppercorns , crushed (we used a mix of colours)

wine vinegar (red or white)

2.0 tsp mild olive oil
