1 tsp. ground allspice

2 Tbs. olive oil

1/2 large onion (I like red), thinly sliced 

1-1/2 to 1-3/4 lb. red cabbage, thinly sliced (6 to 7 cups)

1/2 cup firmly packed dark brown sugar

Freshly ground black pepper to taste

1/4 tsp. ground nutmeg

1/3 cup red-wine vinegar

1 cup red Zinfandel or other good-quality red wine

3/4 tsp. coarse salt
