1 large organic free-range egg

2 slices good quality bacon diced

1 large shallot minced

1/2 C sake

1/4lb. large dry* scallops (about 4)

1/4lb. Rock Shrimp

Good sea salt

Freshly ground black pepper

Chopped watercress (about 1 1/2 C)

Sea urchin (optional, but recommended)
