2 cup Uncooked semi-pearled farro

2 tsp fine grain sea salt

5 cup Water

1/3 cup creme fraiche

2 tsp lemon Juice, freshly squeezed (plus zest)

2 tsp good quality white wine vinegar

2 bunches Fresh chives, minced

3 tbsp Fresh dill, chopped

scant tsp fresh thyme leaves

more salt and freshly ground black pepper to taste

6 oz mozzarella or Bocconcini cut or torn into chunks
