1 cup snow peas, trimmed

2 tbsp vegetable oil

1 large shallot, thinly sliced

2 x garlic cloves, minced

1 tbsp fresh grated ginger

1/2 cup golden raisins

3/4 15 oz can “lite” coconut milk, or more to taste

2 tbsp tamari or other soy sauce

2 tbsp maple syrup

1 tbsp mirin

5 x scallions, sliced
