Ingredients for 4 servings

1 cup ketchup, preferably Heinz

1/4 cup light brown sugar

1 tbsp Dijon mustard

1 tsp Tabasco sauce

2 tsp apple cider vinegar

3 - 4 x chipotle peppers in adobo sauce, finely chopped, plus 1-2 tablespoons of adobo sauce

1 tsp olive oil

2 x green onions, thinly sliced

2 ears sweet corn, kernels removed from the cob

1 x red bell pepper, chopped

1 14.5 oz can black beans, rinsed

1 14.5 oz can red kidney beans, rinsed

1 14.5 oz can chick peas, rinsed

2 tbsp finely chopped fresh cilantro

1 tbsp finely chopped fresh oregano
