Ingredients for 10 servings

4-5 lb brisket, silver tip, chuck roast, or rump roast

2 cup peeled baby carrots (whole)

2 large sweet onions, chopped very coarsely

4 x cloves garlic, minced

3 cup canned peeled plum tomatoes, drained, seeded and chopped

1 1/2 cup red cooking wine (or dry red table wine)

1 cup beef stock

2 tsp Dijon-style mustard

2 tbsp tomato paste

1/2 cup light brown sugar

3 tbsp all-purpose flour, divided

1 tsp dried oregano

Salt and pepper to taste

4 tbsp olive oil, divided

2 tbsp water
