2 medium eggplants

2 cups diced tomatoes

1/4 cup red wine (or 1 tbsp red wine vinegar)

salt, to taste

1/4 cup butter

1/4 cup flour

2 cups milk

2/3 cup grated kefalotyri or parmesan cheese
