  • 8 Tbsps unsalted butter
  • 1/4 cup small dice yellow onions
  • 3/4 cup small julienne carrots
  • 1/2 cup thinly sliced celery
  • 1 cup small dice leeks
  • 2 tsps minced garlic
  • 1/2 tsp salt
  • 1 1/2 tsps creole seasoning (recipe follows)
  • 1/8 tsp old bay seasoning
  • 1/2 cup white wine
  • 2 Tbsps fresh lemon juice
  • 2 tsps chopped fresh thyme
  • 2 Tbsps olive oil
  • 6 pompano filets (7-8 ozs each)
  • Special equipment
  • Six 12 x 18 pieces of aluminum foil
  • 1/2 cup Lawry’s seasoned salt
  • 2 Tbsps onion powder
  • 2 Tbsps paprika
  • 1 Tbsp cayenne
  • 1 Tbsp white pepper
  • 1 Tbsp plus 1 tsp garlic powder
  • 1 Tbsp freshly ground black pepper
  • 1 tsp dry mustard
  • 1 tsp dried oregano
  • 1 tsp dried thyme
