1 head Savoy cabbage (1 pound)

1 small onion, thinly sliced

6 ounces shiitake mushrooms, stems discarded, caps thinly sliced

2 shallots, minced

1 cup chicken stock or canned low-sodium broth

2 tablespoons chopped chervil and parsley, for garnish
