3 (6-ounce) packages fresh baby spinach or 11 cups chopped Swiss chard

1/4 cup water

1 (8-ounce) package feta cheese, crumbled

1/2 cup freshly grated Parmesan cheese

1/4 cup chopped dried tomatoes in oil

1 teaspoon dried oregano

3/4 teaspoon salt, divided

1/4 teaspoon pepper

1/2 (16-ounce) package frozen phyllo pastry, thawed (we tested with Athens)

1/3 cup butter, melted

1 tablespoon butter

1 tablespoon all-purpose flour

1 cup milk

2 ounces cream cheese, cubed and softened
