1 head garlic, left whole, plus 2 cloves, grated

Extra virgin olive oil (EVOO), for drizzling

1 cup milk

1 slice crusty bread (about 3 inches thick) or 6 slices of sandwich bread

2 pounds lean ground turkey breast (1 package)

1 tablespoon poultry seasoning

4 tablespoons fresh sage, chopped

1/4 teaspoon nutmeg, to taste

6 shallots, finely chopped

1/2 cup grated Parmigiano Reggiano cheese

1 egg, beaten

1 large head or 2 small heads broccoli

1 pint cherry tomatoes

Salt and freshly ground black pepper

3 tablespoons butter

3 tablespoons flour

1 cup chicken stock

2 1/2 cups good-quality shredded Asiago cheese (10 ounces)
