4 oz canola oil or any neutral oil

8 tbsp dried thick tapioca noodles

1 x garlic, finely minced

2 x shallots, thinly sliced

1 x yellow onion

1 tbsp chunk ginger

1 tsp mushroom seasoning salt or regular salt

1 tsp salt

1/2 x black pepper

2 x Fuji apples, quartered

2 oz dried daikon radishes, sliced

1 oz chunk rock sugar or granulated sugar

12.3 x firm tofu

10 x dried shiitake mushrooms

3 x celery, peeled and halved

1 cup carrot, trimmed and peeled

1 tbsp daikon, trimmed and peeled

1 x bean sprouts

6 x Thai basil

6 x Vietnamese mint

3 tbsp cilantro

2 x fresh serrano peppers, sliced

1/2 tbsp white onion, thinly sliced

4 x red Thai bird chiles

5 x chili garlic sauce, or Sriracha

2 x green onions, finely sliced
