  • 3 Tbsps plain flour
  • fresh ground black pepper , to taste
  • 1 Tbsp olive oil
  • 2 eggs , lightly beaten
  • 2 Tbsps sage , chopped
  • 3 Tbsps creme fraiche , low fat
  • 1 Tbsp coarse grain mustard
  • 300 g new potatoes , scrubbed, grated and squeezed, to remove excess liquid
  • 1 head celeriac , about 300g, peeled, grated and squeezed, to remove excess liquid
  • 3 spring onions , finely sliced
  • 450 g pork tenderloins, cut into 1 cm strips
  • 2 Tbsps dry white wine
