2 cups whole raw cranberries

1/2 to 3/4 cup sugar

1/4 cup fresh orange juice

1/4 teaspoon kosher salt

1 teaspoon grated orange zest

The chantilly cream:

1/2 cup chilled heavy cream

1/2 teaspoon vanilla

1 tablespoon powdered sugar

2 tablespoons fresh orange juice

2 oranges, segmented, 4 pieces reserved for garnish
