1/4 cup Cranberry Pistachio Pesto recipe, see below

1/2 cup toasted pistachios

1/2 cup Dried Cranberries

3 x Roasted Garlic Cloves

2 x fresh parsley sprigs

1/2 cup Olive Oil

Salt and freshly ground black pepper to taste
