3 ounces drinking quality unfiltered Nigori Sake

1 ounce plum wine

1 to 2 tablespoons evaporated cane juice or granulated sugar

1 tablespoon Asian-style toasted sesame oil

1 tablespoon rice bran oil or canola oil

2 ounces fresh young ginger, peeled and sliced very thinly across the grain

1 to 2 cedar planks large enough to hold the fillets
