2 T grated fresh ginger

1 T curry powder

Pinch sugar

2 cans (14 oz. each) lower-sodium chicken or vegetable broth

3/4 cup red lentils

1 or 2 limes, cut into wedges

1/4 cup half-and-half or light cream

Salt to taste


1/3 cup toasted, sweetened coconut

1/3 cup dry roasted peanuts, coarsely chopped

1/4 cup coarsely chopped scallions

1/4 cup coarsely chopped fresh cilantro leaves
