5 leaves of beef gelatine platinum grade

a small piece of fresh ginger peeled

good quality dark chocolate 70 cocoa solids

2 clementines peeled and sliced into thin rounds

1 heaped teaspoon vanilla syrup which you can buy at lots of good food stores or a few drops of vanilla extract

200 g natural yoghurt

600 ml clementine juice from about 20 clementines

caster sugar to taste
