  • 4 cups stale crusty bread, chopped in big chunks, crust and all
  • 1 (28 oz) can crushed tomatoes
  • 1 medium onion , finely chopped
  • 6 garlic cloves
  • salt and pepper, to taste
  • 1/2 cup parmigiano-reggiano cheese
  • 6 fresh basil leaves (optional)
  • 3 Tbsps extra virgin olive oil
  • 1 (15 oz) can diced tomatoes
  • 2 (15 oz) cans white beans , drained
  • 1 qtchicken stock, can also use broth
