Ingredients for 8 servings

1 cup canola oil

2 1/2 tsp sesame oil

3 tbsp sesame seeds

2/3 cup soy sauce

Hot chili oil, to taste

1 1/2 -2 x whole chicken breasts, poached (about 2 lbs.)

1/2 lb smoked or honey ham, sliced thick at the deli counter and then cubed

1 bunch scallions, white and green stems chopped

1 large yellow pepper, seeded, cored, and diced

1 large red pepper, seeded, cored, and diced

3/4 cup walnuts, coarsely chopped

1 lb thin spaghetti, cooked according to package directions for al dente

1 8oz. can sliced water chestnuts, rinsed, drained and chopped

1/2 lb snow peas

1/2 cup fresh cilantro, chopped

salt and ground black pepper, to taste
