1/2 large Vidalia onion, chopped finely

5 cup low-sodium chicken or vegetable stock

1 tbsp olive oil

2 tbsp unsalted butter

1 tsp minced garlic

1/4 cup cooking sherry

1/4 cup white wine

1 tsp fresh thyme, chopped

1/3 plus 1/4 cup grated parmesan, divided
