3 extra large yellow onions, quartered and sliced very thinly (*see note)

1 tablespoon plus 1 teaspoon brown sugar

1 teaspoon salt

¾ teaspoon black pepper

1 teaspoon Italian seasoning

½ teaspoon dry thyme

½ cup Guinness stout beer (or any stout)

¾ cup beef stock

1 ½ teaspoons worcestershire sauce

1 teaspoon balsamic vinegar

1 teaspoon lemon juice

1 tablespoon flat-leaf parsley, chopped finely
