This is pretty easy and delicious! I made it with pre-cooked frozen shrimp, which I roasted in the oven briefly, and it turned out just fine. Also accidentally subbed cayenne for the smoked paprika (red powder in unlabeled container = adventure!) and was pleased with the spiciness. I added the cayenne on purpose the next time I made it. Don't be afraid to use whatever herbs you have, it's a long list and you might not have/want to buy all of them.

Ingredients

1/2 pound medium shrimp, shelled and deveined

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon dried oregano, crumbled

1/2 teaspoon fennel seeds, chopped

1/4 teaspoon dried thyme

1/4 cup canola oil

Salt and freshly ground pepper

1/4 cup (packed) basil leaves

2 tablespoons flat-leaf parsley

1 tablespoon fresh rosemary leaves

1 1/2 teaspoons fresh thyme leaves

1 garlic clove, smashed

2 tablespoons freshly grated Parmigiano-Reggiano cheese

1 1/2 cups quinoa, rinsed

2 1/4 cups water
