Ingredients for 3 servings

1 large bunch of collard greens,organic - chopped

1 tsp extra virgin olive oil

1 tsp apple cider vinegar

2 cloves garlic

pinch of salt and pepper

1 1/2 cups cooked chickpeas (1 can)

1/2 - 1 tsp extra virgin olive oil

1 tsp maple syrup

pinches of these spices: black pepper, smoky paprika, turmeric, cayenne, garlic powder, salt

4 cups diced tiny red potatoes, organic

2 tbsp extra virgin olive oil

2 tsp lemon juice

1/2 tsp garlic powder

1/8 tsp smoky paprika and/or cayenne

pinches of salt and pepper

optional: nutritional yeast to taste

1 1/4 cups boiled carrots, organic

2-3 Tbsp water or non-dairy milk

1 Tbsp lemon juice

1-2 Tbsp maple syrup

1/4 tsp freshly grated ginger (or to taste)

pinch of orange zest

salt and pepper to taste

for extra spice, add a few pinches of cayenne

1 satsuma, peeled and thinly sliced- optional
