3 tablespoons olive oil

1 red onion, sliced

2 garlic cloves, sliced

2 tablespoons fine-chopped fresh thyme

1 14-ounce can of diced tomatoes (we like the Muir Glen fire-roasted tomatoes)

1 tablespoon balsamic vinegar

½ bunch collard greens, cut into ribbons

40 grams gluten-free AP flour mix

1/2 cup whole milk (you can sub in a dairy-free milk here)

3/4 cup cashew cream

1/4 cup water

3 eggs

½ teaspoon fine sea salt

90 grams grated Parmesan
