1 tablespoon baking powder

1/4 teaspoon salt

1/4 pound (1 stick) butter

1 teaspoon vanilla extract

1 1/2 cups sugar

2 eggs

1 cup milk

1 large orange, zest finely grated

A few spoonfuls melted, strained apricot preserves

4 egg whites

1 1/4 cups light corn syrup

2 tablespoons water

2 1/2 cups confectioners' sugar

Pinch salt

1/4 teaspoon almond extract

8 ounces (3 to 4 cups) grated, toasted coconut (8 - 10 ounces)
