pinch grated nutmeg

TO SEAL THE PARFAITS

3 sprigs thyme

200.0g unsalted butter

1 bay leaf , torn

75.0g butter , cut into large cubes

200.0ml milk

3 eggs plus 2 egg yolks

2 eating apples , peeled, cored and chopped

FOR THE CHUTNEY

300.0g fresh chicken livers

100.0g caster sugar

150.0ml Madeira

FOR THE REDUCTION

large pinch saffron strands

2.0 tsp sea salt

1 sprig rosemary , leaves chopped

150.0ml ruby port

5.0 tbsp white balsamic vinegar or cider vinegar

2 shallots , thinly sliced

1 sprig rosemary , roughly chopped

2 shallots , finely chopped

3.0 tbsp olive oil

thumb-size piece fresh ginger , peeled and finely chopped

3 large sprigs thyme , leaves only
