1/4 cup olive oil

2 Tbs. fresh thyme leaves

2 Tbs. fresh rosemary leaves

1/2 tsp. freshly ground pepper

1/4 tsp. salt

2 globe or 4 Asian eggplant, thinly sliced

2 large red onions, thinly sliced

3 large red bell peppers

2 garlic cloves

1 Tbs. olive oil

1/4 cup minced fresh basil

1/2 tsp. chopped fresh thyme

3/4 cup mayonnaise

2 baguettes, each split lengthwise and then cut &nbsp crosswise into thirds

6 to 12 red-leaf lettuce leaves
