3 shallots, minced

6 cloves of garlic, smashed

1 large carrot, peeled, and sliced into 1” chunks

1 stalk of celery, sliced into 1” chunks

2 bay leaves

4 sprigs fresh thyme

1/2 cup Italian parsley

1 bottle dry red wine

2 tbsps tomato paste

2 cups beef stock

salt and pepper

1/2 cup water

2 tbsps butter
