Ingredients for 8 servings

2 cups cooked wild rice

2 cups cooked quinoa

12 ounces gluten-free white bread (day old and a bit stale), cubed (I used “Udi’s” brand)

Olive oil

1 link spicy or sweet Italian sausage, casing removed

1 leek, white part quartered and thinly sliced

6 ounces shiitake mushrooms, thinly sliced

1 clove garlic, pressed through garlic press

1 1/3 cup grated Asiago cheese, divided use

1/3 cup dried cherries

1/3 cup roasted and peeled chestnuts, chopped

1 tablespoon chopped, flat-leaf parsley

1 ½ teaspoon Italian seasoning

¾ teaspoon salt

½ teaspoon black pepper

6 tablespoons melted, unsalted butter

2 cups chicken stock

2 eggs, whisked
