1/2 pound chicken cutlets, cut into bite-size pieces

1/2 red bell pepper, chopped or cut with kitchen scissors into small pieces

2 teaspoons Thai fish sauce

Freshly ground pepper, to taste

2 cups water

1 can chicken stock

2 cups jasmine rice

2 cups 300-count baby shrimp (that means 300 shrimp are in one pound)

3 scallions

20 leaves fresh basil
