1 tablespoon beef fat or vegetable oil

1/4 pound napa cabbage, cored and chopped into 1-inch pieces

1/4 pound shiitake mushrooms, sliced if large

4 green onions, cut into 1-inch lengths

8-10 ounces washed fresh spinach leaves

1 teaspoon minced ginger

4 ounces firm tofu, cut in 1-inch cubes

2 cups beef or vegetable broth, or as needed

4 tablespoons soy sauce, plus more to taste

3 tablespoons sugar, plus more to taste

1 pound New York strip or rib-eye steak, sliced thinly against the grain

4 eggs (optional)
