Ingredients for 4 servings

4 tsps cajun seasoning + 2 tsps

2 tsps paprika + 1 tsp

1 tsp sugar + 1/2 tsp

1/2 tsp cayenne pepper + 1/4 tsp

2 tsps kosher salt + 1 tsp

2 tbsps chopped garlic + 1 tbsp

1/2 stick melted butter

1 whole chicken, quartered

Preparation

1.

Combine Cajun seasoning, paprika, sugar, cayenne pepper, and salt.

2.

Add garlic to the spice mix; combine.

3.

Coat the chicken quarters, both in the skin and underneath, with the melted butter.

4.

When chicken is well coated, sprinkle generously, on the skin and underneath, with spice/garlic blend.

5.

Cover and refrigerate for at least 2 hours.

6.

Heat grill to 360 degrees, lubricate with a dab of oil.

7.

Place chicken pieces, skin side down, onto the grill and leave to cook (undisturbed) for 15 minutes on each side, or until center is thoroughly cooked.

8.

When flipping the chicken pieces, spoon reserved spice/garlic mix onto them then drizzle with "run-off" juices.
