1/4 cup sugarcane vinegar or champagne vinegar

1/2 medium red onion, chopped

2 sticks sugarcane, quartered lengthwise to form 8 thin skewers

4 (1-inch) thick slices center cut tuna loin (about 6 to 7 ounces each)

1/2 teaspoon salt

1 to 2 jalapenos, stemmed and seeded

1 ripe mango, peeled and diced

1/4 cup chiffonade fresh mint leaves

1/2 teaspoon sugar

1/3 cup canola oil

1 large cucumber, peeled, seeded and cut crosswise into 1/2 moons

oil, for brushing

1/2 teaspoon ground cumin

1 cup pineapple juice

2 tablespoons freshly squeezed lime juice

1/2 teaspoon ground coriander
