1/2 cup sliced white mushrooms

2 garlic cloves, sliced

1 white onion, thinly sliced

5 teaspoons minced young ginger (see Note), or 2 1/2 teaspoons minced mature ginger

1 cup apple juice or cider

About 1/4 cup apple cider vinegar

3 cups sliced and peeled ripe nectarines, about 1 1/2 pounds

1 teaspoon kosher salt

1 tablespoon light soy sauce (light-colored, like Pearl River Bridge; not low- sodium)

1/2 teaspoon whole fennel seeds

2 whole cardamom pods, or 1/2 teaspoon cardamom seeds

1/2 teaspoon coriander seeds

1 teaspoon ground white pepper

1/2 teaspoon cayenne pepper

1 to 2 teaspoons light brown sugar
