1 cup FOR THE MINT PESTO --- fresh mint leaves, washed and well dried

1 cup fresh flat leaf parsley leaves, washed and well dried

4 x garlic cloves

1/2 cup Extra Virgin Olive Oil

1/4 cup blanched slivered almonds

1 cup Parmesan Cheese, grated

1 tsp Salt

1/2 tsp Freshly ground black pepper

2 tbsp FOR THE SOUP --- Unsalted Butter

2 tbsp Olive Oil

1 x large yellow onion, chopped

1 1/2 pounds Yukon Gold potatoes , peeled and chopped

3 x celery stalks, chopped

5 cup Chicken Stock or vegetable broth

2 cup shelled fresh or frozen petite green peas, 1 16 ounce bag

1 head Butter Lettuce, about 4 cups loosely packed

3 tbsp chopped fresh mint leaves

2 tsp Salt

1 tsp Freshly ground black pepper

Fresh mint pesto

Creme fraiche, to garnish
