Pinch of salt + 1/2 teaspoon salt

4 mochi cakes (fresh or frozen)

4 cups dashi, instant or homemade

2 teaspoons soy sauce

1 medium-size daikon, cut into 1/2 x 2-inch rectangular strips

4 cups fresh spinach, blanched for 15 seconds and rinsed in cold water

1/2 cup sliced carrots, cut with flower-shaped cutter if desired

4 medium shiitake mushrooms, wiped, and stems removed

4 strips lemon rind (long enough to knot in the middle)
