1 x medium yellow onion, quartered

1/4 cup grated coconut

3 cloves Garlic, sliced

2 x Serrano or Thai chili peppers, seeded and diced

1 tbsp fresh ginger root, minced

2 tsp Garam Masala

1 tsp Ground Cumin

1/2 tsp Cinnamon

1 tsp Salt

1/4 tsp Turmeric

1/4 tsp Ground Coriander

2 cup Vegetable Stock

1 tbsp Canola Oil

2 cup Tomatoes, diced

4 cup fresh pumpkin, 1 small pie pumpking, peeled and diced

2 cup cooked black eyed peas

2 cup Kale or spinach, chopped

3 tbsp Mint, minced

a couple spoonfuls of plain yogurt

Basmati Rice, for serving
