5 medium shiitake mushrooms, stems removed, caps thinly sliced

2 tablespoons rice vinegar

1/2 teaspoon sugar

1/2 cup bean sprouts

2 large eggs

2 cups cooked short-grain rice (prepared according to manufacturer's instructions)

1/3 cup chopped kimchi (radish or cabbage)

1 scallion, cut into matchsticks

1 tablespoon black or white sesame seeds

-- Asian chili paste, preferably Korean (kochujang)
