4 teaspoons all-purpose flour

1 1/2 cups diced yellow onions

1 1/2 cups chicken stock, or chicken broth

3 cloves garlic, peeled and smashed

1 teaspoon chopped sage

1/2 teaspoon whole cloves

1 cup kosher salt

4 tablespoons unsalted butter

1 tablespoon black pepper

2 tablespoons garlic powder

2 tablespoons black peppercorns

4 teaspoons Essence, recipe follows

8 cups dark beer

2 tablespoons salt

2 bay leaves

1 (4 to 5 pound) roasting chicken, well rinsed and patted dry, giblets reserved and chopped

1 tablespoon onion powder
