Salt and freshly ground black pepper

Half a red onion, finely diced

2 to 2½ Tbsp champagne or white wine vinegar

Juice of half a lemon

¼ cup olive oil

½ tsp Dijon mustard

4 large leeks

2 tsp salt

1 lb asparagus

1 (19-oz) can of white beans, rinsed and drained or 1½ cup cooked white beans
