4 sea bass fillets, skin on

20 ml of sunflower oil


black pepper

16 mussels, cleaned and de-bearded

45 g of white leeks, roughly chopped

85 g of fennel, roughly chopped

80 g of carrots, roughly chopped

110 g of red pepper, roughly chopped

1 pinch of thyme

1/2 garlic, roughly chopped

15 g of anchovy fillet

500 ml of Knorr Fish stock

250 g of plaice

25 g of tomato purée

50 ml of double cream

1 saffron strand

Tabasco to taste

Worcestershire sauce to taste

1 tsp of white wine vinegar

1 tsp of caster sugar

4 sprigs of dill
